“Budvar Yeast Beer”
Budvar’s Yeast
beer is the jewel in the Budvar brewery’s crown and
one of the finest beers of its kind brewed anywhere in the world.
Yeast
beer and Budvar Original start life as the same brew, The raw materials for the process are the same:
Moravian pale malt, Red Bine (semi-early) Saaz hops and spring water from the brewery’s underground
lake. The brewing process includes two mash decoction,
manual application of hops followed by cold bottom fermentation.
The beer
is matured in horizontal tanks for 90 days before filtering begins.
It’s at
this point that yeast beer divides from Original. Yeast cells collected during
the most intense fermentation period are reintroduced into the mature lager. The live
culture of yeast gives the beer a high content of amino-acids, B complex
vitamins and molecular proteins which give the brew its unique fresh fullness
of flavour.
It can be
called Krausened lager or krouzkovany-lezak,
but we’ll call it Budvar Yeast beer (ABV 5%).
